Since our lemon tree started ripening, I’ve been making lemonade almost every single week. Fresh lemonade has to be one of the most underrated casual luxuries – it’s refreshing, tart, and it automatically puts you in a great mood. Add in cucumber and you’ve got a great-tasting beverage that everyone can enjoy.
This cucumber lemonade recipe is perfect for a hot, summer day or a lazy afternoon. All you need is some lemons, two persian cucumbers, sugar, and water!
Please note: you do NOT need to heat the sugar and water together for this recipe. Instead, you’ll be adding the sugar directly into the lemon juice so the acidity can dissolve the sugar.
Cucumber Lemonade
Make some delicious and refreshing cucumber lemonade with this simple recipe. All you need is a few ingredients and a blender.

Ingredients
- 1 cup Freshly squeezed lemon juice I used 2 large and 2 small lemons
- 2 Persian cucumbers peeled and de-seeded
- 1 cup Granulated sugar or less if you prefer more tart lemonade
- 6 cups Water
Instructions
- Prep your cucumbers by removing the seeds and skin. I used a spoon to scoop the seeds out of the middle.
- Add the cucumbers to a blender and combine with 1 cup of water. Blend until cucumbers are reduced to a pulp.
- Juice your lemons and strain any pulp/seeds out with a metal strainer. Add to your serving pitcher.
- Add sugar to lemon juice and stir to combine and "melt" sugar. The acidity of the lemon will help it dissolve without heating.
- Add the cucumber and water mixture and stir to combine.
- Add remaining 5 cups of water and stir.
- Add lemon slices to serving cups and serve!
